Ingredients:
1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) butter, at room temperature
2/3 cup sugar
2 large eggs
1 teaspoon vanilla extract
2 ounces unsweetened chocolate, melted
1/2 cup hot water
For the frosting:
1 cup (2 sticks) butter, at room temperature
2 cups confectioners’ sugar
1/4 cup cocoa powder
1 teaspoon vanilla extract
Dash of salt
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9-inch cake pan; set aside.
2. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda and salt.
3. In another large bowl, beat butter and sugar with an electric mixer on medium speed until light and fluffy. Beat in eggs, one at a time, until well blended. Beat in vanilla extract. Gradually add flour mixture to butter mixture, beating until well blended. Stir in melted chocolate.
4. Pour batter into prepared cake pan. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Cool cake in pan on a wire rack for 10 minutes.
5. In a small bowl, whisk together 1/2 cup hot water and the confectioners’ sugar until smooth. Frost top of cake with frosting. Let cool completely.
